Spicy Lamb and Feta Burgers with Cucumber Salsa
Serves: 10
Ingredients:
For the burgers:
1kg lean lamb mince
3 garlic clove, peeled and finely chopped
1tsp ground paprika
1tsp ground allspice
1tsp cumin powder
50g freshly chopped parsley or coriander
Zest of three lemons
250g Feta cheese, roughly crumbled
For the Cucumber Salsa:.
1/2 cucumber, peeled and diced
4 ripe plum tomatoes, finely chopped
1 red onion, peeled and finely chopped
100g black olives, drained and cut in half
4tbsp freshly chopped flat-leaf parsley
4tbsp freshly chopped mint
75ml olive oil
2tbsp lemon juice
Foccacia squares, toasted, or similar,
to serve
Salad leaves, to serve
Method
For the burgers:
In a large bowl mix all the burger
ingredients together.
Shape the mixture into 10 burgers.
Cover and chill for 20 minutes.
For the cucumber salsa:
Meanwhile, mix the cucumber salsa
ingredients together and refrigerate until
ready to serve.
To serve:
Preheat the grill or griddle to medium high.
Grill or griddle the burgers for 6 minutes each
side, or until cooked to requirement.
Serve with the toasted foccacia or similar, the
cucumber salsa, salad leaves and a selection
of relishes.
